Vineyard
Our vineyard is on a 35% slope that gets more than 10 hours of sunshine on summer days. After consultations with experts and vineyard designers, we established the 3×5 matrix of vines and rows. By design, we spur train our vines to limit production to an average of less than 5 lbs per vine. With this practice, the wines produced from our grapes will have full body, complex character and exquisite flavors. Harvesting occurs when the grapes are perfectly ready in all aspects including Sugar content Brix, Tartratable Acidity TA, Alkalinity pH as well as other factors such as ripeness, seed development and most importantly taste. We also encourage sustainable local growers to provide us with their grape to be incorporated into our local wine.
